My events combine the art and passion of Neapolitan pizza with premium quality ingredients and sophisticated technology. I use only carefully selected, original Italian ingredients, and my pizzas are made with pre-dough and/or sourdough, with a minimum of 48 hours of long ageing.
The slow fermentation process helps to create a stronger, more elastic chicory structure, which makes the pizza dough crispy on the outside and soft and airy on the inside. The natural work of lactic acid bacteria and micro-organisms makes the pizza easier to digest, while providing a rich, complex flavour.
